Rosemary Thyme Crackers GF
1 teaspoon sea salt
1 1/2 Tablespoon Thyme, finely chopped
1 Tablespoon Rosemary, finely chopped
1 1/4 Tablespoon Olive oil or Sunflower oil
2 large eggs
Preheat oven 350 degrees
In a large bowl combine 2 cups flour, 1 tsp salt, 1 1/2 tablespoon Thyme and 1 tablespoon Rosemary - whisk thoroughly
In a medium bowl whisk 2 large eggs and 1 1/4 tbsp olive or sunflower oil
Combine wet ingredients with dry, whisk until blended
Roll the dough into a ball and place between two sheets of parchment paper. Roll into desired thickness, remove top sheet of parchment paper, cut into 1-2 inch squares with a pizza cutter.
If desired sprinkle with additional salt.
Bake 12 - 20 minutes until slightly golden. Cool on the baking sheet about 30 minutes.

Manny's Famous Orange Rolls
Ingredients
2 cups whole milk
2 packages yeast
6 - 7 cups all-purpose flour
1 cup granulated sugar
2 teaspoon salt
6 eggs
1/3 cup plus 2/3 tablespoon butter
Orange Filling
12 tablespoons butter
12 tablespoons butter
1 cup sugar
Grated orange rind of three medium oranges
Instructions
Place 2 cups whole milk in a bowl and warm in the microwave to 110 degrees. Add 2 packages of yeast. Proof til frothy.
In a small bowl place 1/3 cup plus 2/3 tablespoon butter - microwave for 20 seconds intervals till it is softened enough to stir. Whisk the softened butter with 6 eggs and set aside.

In the Kitchen aid bowl whisk together 5 cups flour, 2 teaspoon salt, 1 cup sugar. Make a small well in the center and add the proofed milk and yeast mixture.

Buttery Croissant Dinner Rolls
4 to 4 1/2 cups all-purpose flour
1 package active dry yeast (2 1/4 tsp)
1 cup whole milk
1/3 cup sugar
1/3 cup butter
1 teaspoon salt
2 eggs
Warm 1 cup of whole milk to 110 degrees in the microwave. Sprinkle in the yeast and whisk lightly. Let sit for about 10 minutes, until the yeast is frothy.
In a bowl thoroughly combine 2 1/2 cups flour, 1/3 cup sugar, 1 tsp salt.
Make a little well in the middle and pour in the warm milk and yeast.
Add two eggs and mix well. Add remaining flour as needed (about 1 cup). The dough should be elastic and slightly sticky. Put out on a floured counter and knead until smooth and elastic. Shape into a ball and place in a buttered bowl, turn once. Cover with plastic wrap and let rise in a warm place until double in size. About one hour.
Punch down, divide in two. Roll each ball into a circle. Cut with a pizza cutter into triangles. Roll each from fat end to pointed tip. Place with the tip tucked under or they tend to open up a bit, on a sprayed baking sheet.
Let rise until double in size. Brush with egg wash and Bake at 350 degrees for 12 to 15 minutes. Until golden brown. Remove from the oven and rub the rolls with a stick of butter all over the top and sides, this gives them a pretty shine and tastes delicious.
Store in an air-tight container. Enjoy!
